Wenn du in Öl eingelegte Matjesheringe verwendest, nimm sie aus dem Öl und lasse sie gut abtropfen. Wasche sie nicht ab, wir wollen den ganzen Geschmack im Salat!
Je nach Vorliebe kannst du die Matjesfilets im Ganzen lassen oder sie in mundgerechte Stücke schneiden.
Statt zweier kleiner Zwiebeln kannst du auch eine mittelgroße Gemüsezwiebel nehmen. Gemüsezwiebeln sind milder und die Zubereitung geht schneller. Für das Schneiden der Ringe kannst du einen Gurkenhobel benutzen, dann werden die Ringe schön dünn und gleichmäßig.
Lege dann drei Matjesfilets nebeneinander oder schichte eine Lage geschnittener Filets in eine Schüssel. Darüber verteilst du gleichmäßig die Zwiebelringe. Darauf schichtest du gitterförmig wieder drei Matjesfilets. Darauf wieder Zwiebeln und obenauf die letzten zwei Matjes mit den restlichen Zwiebeln.
Verrühre für die Sauce den Joghurt mit Sahne oder Schmand, gib den Zitronensaft und etwas Mineralwasser dazu. Schneide nun die Gewürzgurke und den Apfel in kleine Würfel und gib dies zusammen mit den einzelnen Gewürzen in die Sauce. Das Ergebnis sollte leicht cremig sein. Aber nicht zu fest, weil die Sauce noch andickt. Dazu gibst du Pfeffer und eine Prise Zucker. Sei sparsam mit Salz, die Matjesheringe sind von Natur aus schon sehr salzig.
Tipp: Mit einem Heringsgewürz ersparst du dir übrigens das Mischen der einzelnen Gewürze. Du kannst auch Sauerbratengewürz nehmen, es ist die gleiche Mischung.
Gib die Sauce nun über die geschichteten Heringe. Nimm in jede Hand eine Gabel und hebe damit die Matjes vorsichtig etwas an, damit die Soße sich gut verteilt.
Abdecken und unbedingt bis zum nächsten Tag durchziehen lassen. Erst dann entfaltet sich der richtig intensive Geschmack. Wer nicht so lange warten will, kann den Salat natürlich auch sofort essen. Er ist dann milder.
